I love it not only for its health benefits, but also because it makes anything baked turn out just divine. I get compliments all the time on my baked goods; people can't quite put their finger on what it is exactly, until I tell them its the coconut oil (and they nod in satisfaction!). And they made the entire house smell amazing :) <br /><br />I did make a few changes because I didn't have a couple of the ingredients but they turned out delish! Here's what I changed: I used vegetable oil in place of the coconut oil (I still want to try it though), 1/2 cup maple syrup instead of the xlyosweet/stevia, I added 4 tbsp. coconut flour (because the batter was a bit runny due to the maple syrup) and I threw in 1 tsp. baking powder (again, because of the maple syrup making things a little bit runny). <br /><br />These are so good! I haven't had a decent gluten free/dairy muffin in a long time. Thanks so much for the awesome recipe Kelly!
